Ingredients:
- 1/4 pound of cooked shrimp, diced
- 1 small tomato, diced
- 1 apricot, diced
- 1 small shallot, diced
- 1 lemon, squeezed
- 1 tsp mayonnaise, or mayo spread
- 1 tsp garlic powder
- salt and pepper to taste
- endive leaves
- dried basil and mint for garnish
- In a small bowl, mix all ingredient except endive and dried herbs
- Lay leaves out on a plate, and fill with your salad with a small spoon
- Sprinkle with dried basil and mint
