Shrimp and Apricot Endive Boats

So yea, this recipe could be a really nice appetizer for your summer party or potluck, but last night, I enjoyed these endive boats for dinner.

Ingredients:
  • 1/4 pound of cooked shrimp, diced
  • 1 small tomato, diced
  • 1 apricot, diced
  • 1 small shallot, diced
  • 1 lemon, squeezed
  • 1 tsp mayonnaise, or mayo spread
  • 1 tsp garlic powder
  • salt and pepper to taste
  • endive leaves
  • dried basil and mint for garnish
Steps:
  1. In a small bowl, mix all ingredient except endive and dried herbs
  2. Lay leaves out on a plate, and fill with your salad with a small spoon
  3. Sprinkle with dried basil and mint
